  • 3 very ripe bananas
  • 50g butter, melted
  • 2 eggs, separated
  • 200g caster sugar
  • 300g plain flour
  • 2 teaspoons bicarbonate of soda
  • 250g walnuts, finely diced
  • 100g dark chocolate, finely diced

  1. Preheat oven to 180 C / Gas 4. Lightly grease a loaf tin.
  2. Mash the bananas and combine with melted butter and egg yolks; mix well. Beat the egg whites until fluffy; add the sugar and continue beating until sugar has dissolved and mixture is stiffer.
  3. In a mixing bowl, combine the flour and bicarbonate of soda; add the mashed bananas and mix well. Gently fold in the beaten egg whites. Add walnuts and chocolate; mix gently.
  4. Transfer cake mixture to the loaf tin. Bake for 50 minutes in preheated oven. Let cool and garnish with prepared chocolate sauce and sliced bananas.

Chocolate Chip Walnut Banana Bread

Let’s not beat around the bush, shall we? I’m just going to come right out and say it. Friends, this is the most amazing banana bread. Ever. EVER. A bit ooey, a bit gooey, and absolutely bedazzled with chocolate chips and walnuts. I dare you to try and take a bite with out tasting one or the other.

Not one. Not two. Not three. FOUR bananas are packed into a single loaf of chocolate chip walnut banana bread. That’s what gives it it’s beyond high moisture content. This bread is rich and decadent. Just like any treat should be if you ask me! The fact that it has some bananas thrown in for good measure is just an added benefit. And because of said bananas, that means this is totally an appropriate breakfast food! Don’t you like how my mind works?


  • ½ cup butter, softened
  • 1 cup sugar
  • 2 eggs, beaten
  • 4 ripe bananas
  • 1-1/2 cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup walnuts, chopped
  • 1 cup chocolate chips
  1. Preheat oven to 350 degrees.
  2. In the bowl of an electric mixer, cream together butter and sugar.
  3. Add eggs and bananas and mix until well combined.
  4. Add flour, baking soda, salt and vanilla and mix until just combined.
  5. Fold in walnuts and chocolate chips.
  6. Pour batter into greased loaf pan.
  7. Bake for 55 minutes. If beginning to brown to quickly, loosely tent with foil.
  8. Turn oven off and leave bread in oven for additional 15 minutes.
  9. Allow bread to cool completely before removing from loaf pan to serve.

So pour yourself a tall glass of milk! Believe me, it’s definitely warranted with a slice of this amazing bread!

Walnut and chocolate chip banana bread

Ingredients
2 eggs
1 teaspoon vanilla essence
1/2 cup (100g) melted butter
1.5 cups sugar
2/3 cup buttermilk (see notes for substitutions)
2 cups mashed bananas
2 teaspoons baking soda
2 teaspoons baking powder
3 cups flour (50% all purpose and 50% whole wheat)

1/2 cup chopped walnut
1/2 cup chocolate chips (milk or dark or semisweet)

Preheat the oven to 180 C. Place the rack in the middle

Grease and flour your bundt pan, set aside

In a bowl whisk the eggs and vanilla till the eggs are pale

Add the sugar and melted butter and whisk till the mix is homogenous and light in colour

Add the buttermilk and mashed bananas whisk till the mix is homogenous

Add the flour, baking powder and baking soda

Using a spatula and stir gently till the batter is homogenous and the flour disappears completely (try not to over mix)

Pour the batter into the prepared bundt pan

Sprinkle the walnuts and chocolate chips on top (You can increase the amount if you like)

Bake for 50 minutes or until a knife inserted in the center comes out clean

Take out of the oven and cool on a wire rack for 15 to 20 min before attempting to remove it from the pan (I find it easier to take out the longer it is allowed to stay in the pan)

Notes
If you don’t have buttermilk, you can replace the same amount with milk. Just add 2 teaspoons vinegar to the milk and set it aside for 10 min before using it

This banana bread recipe is freaking out of this world. It’s so moist, and chocolatey! I just can’t get enough of this homemade banana bread!

A simple reminder – Only use ripe bananas for this banana bread recipe. Don’t use the pretty ones, fresh from the store. Use the ugly bananas with brown spots. Seriously, those work best!


How to store chocolate chip banana bread and keep it moist

Once the banana bread is completely cool you can wrap it with plastic wrap and leave it on the counter at room temperature for 3 days.

You can wrap it in plastic wrap or foil and store it in the fridge for up to 1 week.

Yes, you can also freeze your banana bread. Place it in a freezer bag and be sure to remove all the air. No freezer bag? Wrap it in plastic and then foil. Freeze up to 3 months.

To thaw the banana bread, remove from the freezer and let it come to room temperature and warm a piece up in the toaster and enjoy!


Banana Chocolate Chip Muffins

These tender, moist banana muffins are packed with three different kinds of goodies: toasted walnuts, cinnamon chips, and chocolate chips. Chocolate and banana? Think banana split, you'll get the picture.

After initially posting this recipe and then reading your comments, we've cut back on the sugar a bit. The muffins are even tastier than before, as less sweetness allows the flavors of the other ingredients to shine through.

Ingredients

  • 8 tablespoons (113g) butter, room temperature
  • 2/3 cup (131g) sugar
  • 1 cup (227g) mashed banana, about 2 medium or 1 1/2 large bananas
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/8 to 1/4 teaspoon butter rum or coconut flavor, optional
  • 1/3 cup (74g) milk
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (120g) King Arthur Unbleached All-Purpose Flour
  • 1 cup (113g) King Arthur White Whole Wheat Flour
  • 3/4 cup (128g) chocolate chips
  • 1 cup (113g) chopped walnuts, pre-toasted in a 350°F oven for 8 minutes, if desired
  • 1 cup (170g) cinnamon chips, optional but tasty

Instructions

Preheat the oven to 350°F. Lightly grease 12 to 14 standard muffin cups. You'll use the larger number of cups if you include the full amount of all three add-ins: chocolate chips, walnuts, and cinnamon chips.

In a medium-sized mixing bowl, beat together the butter and sugar till smooth.

Beat in the mashed banana, then the egg, flavorings, and milk.

Add the baking powder, baking soda, salt, and flours, stirring till smooth if the mixture has a lot of lumps, beat at a higher speed until they've nearly disappeared.

Banana Chocolate Chip Muffins

Stir in the chocolate chips, walnuts, and cinnamon chips.

Heap the thick batter into the prepared muffin cups, mounding them quite full a muffin scoop works well here. Sprinkle the tops of the muffins with coarse white sparkling sugar, if desired.

Bake the muffins for 20 to 23 minutes, until a cake tester inserted into the center of one of the middle muffins in the pan comes out clean.

Remove the muffins from the oven, and tilt them in the pan to cool a bit this will prevent their bottoms from becoming soggy. As soon as you can safely handle them, transfer the muffins to a rack to cool completely.

To begin with the Banana Bread With Chocolate Chip And Walnut first, take a 9” by 5” inch loaf pan and grease it properly,dust it with flour and tap on the base to remove excess flour.

Take flour ,baking soda and baking powder together in a strainer and strain it to make uniform mixture.

In a blender add brown sugar, white sugar and grind them to a fine powder.

In a bowl break 2 eggs and whick them. Now on the other hand grind the bananas into a nice puree

Add the Banana's and sugar mixture into another bowl and mix them well.

To this mixture add some vanilla essence and butter and give it a good mix until they combine together.

Now Add this mixture to the flour and also add the whisked eggs, oil. With a hand blender mix the mixture.

Now once you get a good mix add chocolate chips and give a light mix to the flour mix.

Transfer the mixture to a loaf pan, in a preheated oven at 180 degree celsius bake the bread for 45 - 50 minutes.

Once cake is done ,you can do the skewer test ,if its come out clean then your bread is done.

Serve the Banana bread with chocolate chips and walnut with a yummy scoop of ice cream for a tea time snack.
