I remembered that I had in my old notebook some recipes in which I scalded the meringue with various syrups and I said to try with burnt sugar syrup.

The top with this burnt sugar syrup came out very good, but it didn't grow as much as I would have liked, although I added 1/2 sachet of baking powder.

For the top, mix the egg whites with a little salt, then add the three tablespoons of sugar and continue mixing vigorously.

Leave the bowl aside and caramelize 4 tablespoons of sugar.

In another bowl we boil water.

When the sugar has diluted, put the boiled water on it and leave the bowl on low heat until the complete dilution of the sugar that hardens on contact with water, even if it is boiled.

Then pour in a thin thread, the hot syrup over the beaten egg whites and mix vigorously until you get a fluff.

Remove the mixer and insert a wooden spatula with which we will slowly and from the bottom up mix the composition over which we sprinkle coconut and gradually flour mixed with baking powder.

Grease the baking tin with a little oil and spread the composition in it, then put it in the oven for 35 minutes at 180 degrees, or until it passes the toothpick test.

Meanwhile, we prepare the cream.

We break the chocolate into pieces and put it in a bowl together with the liquid cream and a little salt.

Put the bowl on low heat and chew in it until the chocolate melts, then let the bowl cool.

When it cools completely, we put the mixer in the cream and mix until it becomes frothy, then we start to add little by little the mascarpone.

I didn't add the essence because I liked the taste of the chocolate, but it can be added, according to my preferences.

For the syrup, put the three spoons of caramelized sugar, then dilute them with hot water and leave the bowl on the fire until the hardened caramel melts.

When the syrup cools, add the amaretto.

We pour the grape compote in a sieve, and we syrup the top with the juice.

Spread 1/2 of the cream over the counter, place the biscuits lightly passed through the syrup and spread the rest of the cream over them.

Put the grapes on top and top with jelly cake, prepared according to the instructions on the envelope.

Let the cake cool for a few hours, then portion it.
