Spaghetti with prickly pears is a preparation that the girls in the office initially rejected me. The idea of the dish I was going to make discouraged them but as I prepared I saw them curiously turn around. The tasting was made an encore and even Ivano wanted to come to us for lunch to be able to taste them. Beyond belief!

How to make spaghetti with prickly pears
Wash and peel the prickly pears, perhaps helping you by following the guide I wrote here.
Now cut them into cubes.
Finely chop the onion and brown it in a pan with oil.
After a few minutes add the prickly pears, add salt and pepper and cook with the lid on for about 10 minutes.
Use a vegetable mill to recover all the pulp.
Put the prickly pear sauce back on the heat and let it thicken.
In a flat plate lined with parchment paper, arrange a part of the cheese in a circle and cook it in a preheated oven at 200 ° C for 3-4 minutes or in the microwave for half a minute.
Gently turn the cheese over on a semi-spherical bowl and when it has cooled completely, place it on the serving dish.
Cook the pasta, drain it al dente and toss it in the prickly pear sauce.
Turn off the heat, add the remaining cheese and mix everything well.
Put the spaghetti in the cheese wafers and add the toasted chopped almonds.
Serve your spaghetti with prickly pears.
