How to make fruit baskets
Start preparing the pastry by combining flour, eggs, sugar, grated lemon peel and butter into chunks. Work with your fingertips starting from the center and gradually incorporating all the flour.
Once you have a smooth dough, wrap it in cling film and leave it in the fridge for 30 minutes.
Once the dough has been taken, roll it out on a floured work surface to obtain a sheet of about 3mm.
With a pastry bowl, form small circles and transfer them into the tart molds.
Prick the base with the tines of a fork, then cook the shortcrust shells in a preheated oven at 180 ° C for 15-20 minutes. Once ready, let it cool.
Now prepare the custard by combining the egg yolks and sugar.
Then add the flour and work until you get a cream.
Heat the milk with the vanilla pod and lemon peel on the stove.
Before it reaches the boil, lift the vanilla and lemon and transfer to the prepared mixture.
Stir and pass everything over the heat to thicken.
Pour the cream into a bowl, cover with the cling film and let it cool completely.
Clean the fruit and cut it into small pieces.
Now fill the pastry baskets with the cream, using a syringe for sweets.
Finally garnish with the pieces of fruit and mint leaves.
Your fruit baskets are ready to be served.
