The fig and almond tart is the dessert that I prepared yesterday to conclude the Sunday lunch with the family, I prepared a short pastry with almonds and filled it with a custard always with almonds and then covered with caramelized figs. I love figs, they are my favorite summer fruit and the fig and almond tart won me over at the first taste and already gave me the inspiration to prepare another version, this time with ricotta and honey, what do you say combination do you like? How to make a fig and almond tart
Prepare the almond shortcrust pastry by putting the flours, sugar and yeast in a bowl with the cold butter cut into chunks and the eggs in the center.
Quickly knead all the ingredients to form a dough, roll it up with cling film and put it in the fridge to rest for 30 minutes.
Now resume the pastry and with a rolling pin roll out a sheet of 5 mm thickness and line a greased and floured tart mold.
Prick the surface of the pastry with the tines of a fork, then cover with parchment paper and beans and bake for about 20 minutes. Now remove the parchment paper and cook for another couple of minutes.
Meanwhile, prepare the almond cream whipped the egg yolks with the sugar, then add the starch and finely chopped almonds.
Add the cream and then the milk slowly, mix and put the cream on the heat.
Cook the almond cream over low heat and stir continuously until it thickens.
Now pour the hot cream onto the pastry shell and level as much as possible with a spatula.
Caramelize the figs, rinse the figs under water, dry them, remove the stalk and cut them into 4 parts.
In a saucepan, melt the butter with the sugar then add the figs, vanilla and a cup of water and cook for a couple of minutes.
Cover the fig and almond tart decorating with the caramelized figs arranged radially over the entire surface, then add the sliced almonds. Refrigerate for at least an hour before serving.
