Baked vegetables are a simple, light and tasty side dish, I prepared them last week to dispose of a box of vegetables that a friend of my father gave me. Instead of arranging the vegetables in bulk as I usually do, I put them all in a row divided by color and I thus obtained a very nice color effect, too bad that when cooked the vegetables have lost their bright color :) I completed the dish covering the pan of vegetables with a sort of crumble made with breadcrumbs, parmesan and herbs and I brought to the table, a delicious side dish. How to make baked vegetables
Peel the potatoes and carrots, cut them into cubes and blanch them for 5 minutes, then cut them into slices
Check the aubergines and courgettes and cut them into slices
Clean the pepper and cut it into strips, also cut the tomatoes and spring onions always into slices.
Line the baking sheet with parchment paper, brush with oil and then place the rows of vegetables horizontally.
Then add the onion slices and sprinkle with salt and pepper and cover with a drizzle of oil
Put the vegetable pan in the oven at 180 ° and cook for 15 minutes
In a bowl, mix the breadcrumbs, parmesan and chopped herbs
Sprinkle this mince over the vegetables and grill for 5 minutes or until the vegetables are well browned.
Serve your vegetables in the oven
