Cantonese rice is a classic of Chinese cooking, made with basmati rice and seasoned with peas, egg and cooked ham. The dish is also known by the name of fried rice or sauteed rice and is one of the best known oriental recipes in Italy together with spring rolls. It is very simple to make at home, the ingredients are easily available and it has a taste very close to that of Europe, which is probably why it is so popular here in the West. After trying to make this dish several times, I found the perfect recipe, I don't know if it's the original Cantonese rice recipe, but it's very, very similar to what I order at the Chinese restaurant. I love it, and it's a dish that never fails when I prepare ethnic dinners. Try this recipe and you'll love it, sure!


How to make Cantonese rice

Rinse the rice under running water several times until the water is transparent. Put the rice in a saucepan with the water which must be one and a half times the weight of the rice. When it reaches a boil, cook for about 10 minutes. Drain, and put the rice to cool.

Beat the eggs in a bowl.

Heat 2 tablespoons of seed oil in a wok, add the egg and scramble it in a pan.

Then add the diced cooked ham and the blanched peas and brown them for a couple of minutes, then lift from the wok and set aside.

Now put 2 tablespoons of sesame oil in the wok and when it is hot add the rice. Sizzle for about a minute and add salt.
Add the pea, egg and ham dressing and sauté for about 30 seconds.

Now serve your Cantonese rice.
