These crostini are an appetising mix of tender thin slices of finest Scotch beef and rich beetroot and orange chutney. They are easy to make and all the ingredients can be store cupboard or freezer, so you’ll never be caught out again if unexpected guests turn up or people are hungrier than expected!

  1. Cut the baguette into slices.
  2. Heat the oil in the frying pan, add the sliced bread and cook on both sides until golden brown.
  3. Rub toasted bread with a cut side of garlic to give a subtle flavour.
  4. Spread Rannoch Smokery Beetroot & Orange Chutney liberally on toaste, add a slice of avocado and top with half a slice of Rannoch Smokery Cold Smoked Beef and serve!

Back in July, Madi and I attended a very elegant wedding. During the cocktail hour, we were served a couple of different hors-d’oeuvres that were just delish. I just knew I’d have to replicate at least one of them for our followers.

Appetizers to me need to be simple, bite-sized and delicious. Roast Beef Crostini fits all of those requirements. With 3 ingredients, (okay, 4 if you count olive oil) you’ll be amazed at how much flavor these pack.

Nothing complicated in the preparation of Roast Beef Crostini. You can whip up a tray of these in less than 10 minutes and your guests will be impressed. But most importantly they’ll walk away well fed.

They are simply perfect for the upcoming holiday season. Make them for Thanksgiving, Christmas Eve and definitely for New Year’s Eve. Roast Beef Crostini is ideal for a Friday movie night at home with a bottle of wine. The possibilities are endless.

Some tips for making Roast Beef Crostini:

  • I used a Boar’s Head London Broil, a top-quality roast beef from the deli.
  • Use any variety of savory cream cheese to differ the flavor.
  • If your baguette is very crunchy, broil only one side.

  • 1 (13 ounce) baguette, sliced
  • horseradish cream sauce
  • baby arugula
  • thinly sliced leftover beef tenderloin (or prime rib)
  • blue cheese, sliced and broken into shards

    1. Preheat your oven to 400° and spray a large rimmed baking sheet with olive oil.
    2. Slice baguette into 1/4 to 1/2-inch (or approximately) and place on the prepared pan. Spray the tops of the bread with olive oil before baking on the middle rack for 4 to 6 minutes.

    1. For the beef tenderloin: Preheat the oven to 500 °F.

    2. Place the beef tenderloin on a baking sheet, drizzle with the olive oil and season liberally with salt and pepper. Rub the oil and seasoning evenly over the meat.

    3. Roast the tenderloin until an internal thermometer reads 125 to 130 °F for rare to medium rare, about 20 minutes. Remove from the oven, tent with aluminum foil and let rest until it reaches room temperature, at least 20 minutes. Transfer to a cutting board and thinly slice.

    1. For the crostini: Turn down the oven temperature to 400 °F.

    2. Put the baguette slices on a baking sheet in 1 layer. Drizzle with the olive oil and sprinkle with salt and pepper. Bake until golden brown and toasted, about 5 minutes.

    Horseradish Sauce

    1. For the horseradish sauce: Add the sour cream, applesauce, horseradish, mayonnaise, breadcrumbs and chives to a medium bowl and mix until combined. Season with salt and pepper.

    2. To assemble: Spread a dollop of horseradish sauce onto each toasted baguette piece, add a slice of beef tenderloin and then top with another dollop of horseradish sauce and a few watercress leaves.


    1. Slice a fresh baguette thickly and grill over a medium-hot grill.
    2. Don&rsquot walk away or answer the phone. Don&rsquot check Facebook or walk the dog.

    Grilling should take about five minutes in total. I can&rsquot tell you how many times I got distracted and walked away from grilling baguette and burned them up! Learn from my mistake and babysit your grilled baguette slices so they don&rsquot burn to a crisp.

    Bacon Horseradish Dip

    Heluva Good! has a whole line of delicious dips, all with amazing flavor profiles but the Bacon Horseradish Dip was SCREAMING at me to be used in this recipe. You all know of my love of bacon! The horseradish in this dip gives an awesome and unexpected kick and I knew I wanted to create a crostini topped with grilled steak. Steak and horseradish. A CLASSIC flavor combination. And then bacon&hellip.everything is better with bacon. Amirite?

    Spread a layer of the Heluva Good! bacon horseradish over your grilled crostini. I make the spread on the thicker side. I want to sink my teeth into the dip. Get INTO that good dip!


    Preparation

    Preheat oven to 400 F. Arrange baguette slices on a large, rimmed baking sheet. Drizzle olive oil on top of the rounds and sprinkle with salt.

    Bake until lightly toasted, about 5 minutes. Let cool before assembling the treats.

    Spread a thick layer of Boursin cheese on to each baguette slice, about 1 tablespoon per toast.

    Add a layer of thinly sliced roast beef.

    Top each toast with a few strips of the roasted red peppers.

    Add a sprinkle of salt or freshly cracked pepper, if desired. Arrange them on a tray and serve.


    Pan Searing the Filet

    The tenderloin should be seared in a heavy skillet and I recommend cast iron. A non-stick skillet is not good for this amount of heat and it would probably get damaged by the high heat.

    Place a tablespoon of olive oil in the skillet and bring the oil to smoking on high heat. My laser temperature gun had the temp at a little over 500°F. Try to keep the temperature at no more than this. I have an electric stove so I raise the skillet off the element to let it cool a little if it’s too hot. A laser temperature gun (#ad), is a good tool to have for this.

    Place the filet into the skillet on edge to brown the sides of the meat. Let the meat sear for a minute then turn to another edge. Keep working around the filet to brown.

    Turn the meat to the top side to sear. Let this go for a couple minutes then turn to the opposite side. Turn the heat down and flip the meat every couple of minutes until the internal temperature is around 130°.

    With experience, you can judge the doneness of a filet with your fingers. Place a finger on the meat and see how much the meat jiggles with movement. If it seems like the meat is a water filled balloon, it has to cook some more. If the meat doesn’t jiggle but is soft, the temperature is probably good for medium rare. It’s best to use an instant read thermometer though.

    Remove the filet from the skillet and tent with foil for 10 minutes before slicing.

    Toast the baguette

    Turn on your oven broiler to high and place a rack 6 or 7 inches away from the element. Slice the baguette into 1/4 inch slices and place in a baking sheet.

    Drizzle the bread with olive oil then spread the oil with a brush. Sprinkle the bread with a bit of kosher salt and granulated garlic. Place the sheet into the broiler for 1 to 1 1/2 minutes, turning the sheet occasionally to brown evenly. This is where you have to really babysit the bread so it doesn’t burn. That can happen really fast if not careful.

    I have severe anxiety regarding this Sunday’s Academy Awards.

    Obviously, some of said anxiety is anticipatory—Who will give the best/worst speech? Is JLaw going to be drunk? Has Amal forgiven Giuliana for making fun of her white gloves at the Globes? WILL BEYONCE BE THERE.

    These questions (and my roommate’s snoring) keep me up at night, but I’m mostly panicked because I’ve seen zero of this year’s Best Picture nominees.

    As I’ve mentioned before, I pride myself on getting through at least 75% of Oscar nominated movies before the big show. Such an accomplishment coupled with my being up to date on 10-12 television shows pretty much guarantees that I slay on the February small talk front. Bring on the strangers and friends-of-friends at cocktail parties! I shall wow them with my film buff-ness!

    Not this year. This year, I fell down on the job.

    I don’t really have a good excuse for my shameless lack of Best Picture viewing other than the fact that NYC has been akin to the frozen tundra lately, and eating Sour Patch kids while watching Step Brothers for the infinitieth time has seemed far more appealing than venturing 6 blocks to the movie theater. I did purchase tickets to American Sniper a few weeks ago, but I ended up drinking cocktails with Logan on the couch and missing it. Sorry.

    Oh, and my friend Daniel called a couple weekends ago and, for no apparent reason, word vomited the endings to every single Best Picture nom except Birdman, which he thinks I should see for myself.

    He has been excommunicated.

    It’s bad enough that I’ve been iced from movie convos this award season, but what’s worse is that I’m not qualified to do a kitschy Oscar-themed round-up à la 2014. (I’m sure you’re devastated.) However, I did make you some epic Beef Tenderloin Crostini with Whipped Goat Cheese and Pesto that are guaranteed to take home top honors at all of Sunday’s viewing parties…

    When I look at these beautiful babies, I want to sing that annoying John Legend song and do interpretive dance with two steaks and a bowl full of whipped goat cheese. “Allll of me, loves allllll of you. All your curves and all your edges, all your perfect imperfections…”

    You will most likely have similar feelings, as the amount of flavor and texture packed into each of these tiny wonders is truly magical. Toasty, garlic-rubbed baguette slices are the perfect base for tangy whipped goat cheese, gloriously tender slices of beef filet and your favorite fresh pesto. The result is an unbelievably creamy, crunchy, meaty dreamboat of a bite that people will lose their shit over. (I know this for a fact because I served Beef Tenderloin Crostini at Logena Christmas. People lost their shit.)

    To those of you getting slightly sweaty thinking about all the different components involved here, please take it down a notch. These bad boys are doable from start to finish in about 45 minutes (and that’s with a champagne lag), but you could shave 20 minutes off that time if you use store-bought crostini and pesto. You can also prep the individual elements of the recipe up to a day in advance, and then just slice the steak and assemble the crostini before serving. Bing, bang, boom. Take a bow. (These are also an amazing way to put any Slow-Roasted Beef Tenderloin leftovers you may have!!)

    In case you’re in the market for some other Oscar-friendly finger food, I highly recommend chicken fingies, grilled cheese bites, Manchengo crisps, fancy popcorn, classy quesadillas (these or these), and maybe some killer oatmeal cookies. Needless to say, champagne punch is non-negotiable.

    Sidenote: If you wanted to get super weird and reimagine these crostini as giant toasted steak sandwiches, I wouldn’t judge. SUNDAY.

    Beef Tenderloin Crostini with Whipped Goat Cheese and Pesto: (Serves 8)

    Ingredients:
    ½ baguette, cut into ¼-inch slices (You should have around 25 slices.)
    4 tablespoons extra virgin olive oil, divided
    5 cloves garlic, divided
    2 8-ounce pieces beef tenderloin
    Salt
    Fresh ground pepper
    1/3 cup pesto of your choice (I used my kale pesto, but rustic basil pesto would also be bomb if you want to go the homemade route.)
    For the Whipped Goat Cheese:
    4 ounces cream cheese, softened
    4 ounces goat cheese, softened
    2 tablespoons extra virgin olive oil
    ½ teaspoon crushed red pepper flakes
    Pinch of salt

    Preparing your Beef Tenderloin Crostini with Whipped Goat Cheese and Pesto:

    -Let’s start with the crostini, shall we? Arrange the baguette slices on a large baking sheet. Lightly brush both sides of the bread with olive oil (you’ll need about 2 tablespoons of oil for this) and sprinkle with a little salt.

    -Place bread under the broiler for 1-2 minutes on each side until lightly brown. Please pay attention while you do this, peeps, it is scarily easy to burn crostini.

    -Peel 1 clove of garlic, and slice the tip off. Rub the clove on one side of each toasted baguette slice. Set crostini aside to cool while you get to work on your steak.

    -Pat the steaks dry with paper towels and season both sides generously with salt and fresh ground pepper.

    -Heat 2 tablespoons olive oil in a large skillet or saucepan over medium-high heat. When hot, add the steaks and cook for about 4 minutes on each side for medium-rare. When you turn the steaks (after the first 4 minutes), smash 4 garlic cloves in their skins and add them to the skillet. Periodically use a spoon to baste the steaks with the oil/juices in the pan.

    -Remove the steaks to a cutting board and let rest for 10 minutes before thinly slicing them against the grain. (Please don’t skip the resting step. You need to let all the beef’s glorious juices redistribute.)

    -While the steaks are resting, get going on the whipped goat cheese. You have two options here: 1.) Place all of the ingredients in a food processor and process for 1-2 minutes until fluffy and smooth. 2.) Place all the ingredients in a bowl and beat with a hand mixer until fluffy and smooth. (I went with the latter bc I don’t like to clean my food processor, but you do you.)

    -To assemble your crostini: Spread each toasted baguette slice with whipped goat cheese. Top with a slice of steak and a small dollop of pesto. Done and done.

    Preparation

    Horseradish Cream

    Step 1

    Whisk crème fraîche (or sour cream) in a medium bowl until thickened and soft peaks start to form, 1-2 minutes. Fold in horseradish and peppercorns season with salt and more horseradish, if desired. DO AHEAD Sauce can be made 3 days ahead. Cover chill.

    Step 2

    Combine first 5 ingredients and rub all over meat, pressing to adhere. DO AHEAD Beef can be seasoned 1 day ahead. Wrap in plastic chill. Let stand at room temperature for 1 hour before continuing.

    Step 3

    Preheat oven to 400°. Scatter rosemary over bottom of a large roasting pan.

    Step 4

    Heat oil and butter in a 12 inches cast-iron skillet over medium-high heat. Sear meat until brown on all sides, about 5 minutes. Transfer to prepared roasting pan.

    Step 5

    Roast meat until an instant-read thermometer inserted into thickest part of beef registers 125° for medium-rare, about 30 minutes. Transfer to a carving board. Let rest for 15 minutes. Thinly slice tenderloin. Serve with Horseradish Cream.

    Step 6

    To double or triple the recipe, sear the tenderloins one at a time, then arrange crosswise in roasting pan (cook time will be the same). Leave at least 1 inch-2 inches between pieces of meat.
