It took : In a bowl sift the flour, make a hole in the middle, put the crushed yeast, add the sugar, salt and 50 ml of warm milk, mix a little to blend and let it rise for about 10 minutes. When the mayo has risen, add the yolks, lard and the rest of the milk and start kneading. Divide the dough into two equal parts, in one part add the cocoa mixed with milk and knead well. Put in each bowl each part of the dough, cover with a towel and let rise about 30- 40 min.
Filling : Mix the egg whites with a pinch of salt, but not too hard, add the sugar and mix for a few more minutes, then add the walnuts and mix. Drain the cherries from the syrup.
After the dough has risen, divide each piece in two. We must have 2 white sheets, 2 brown sheets.
