Famed Southern plantation property the Inn at Palmetto Bluff, a Montage Resort, in Bluffton, South Carolina, is undergoing a transformation both in terms of the property and in the form of a greater commitment to its food and beverage program. In 2014, the property was acquired by California-based Montage Hotels & Resorts. Since then, Montage has vowed to expand the property while maintaining its spirit and commitment to the local community. Over the coming months, the property will add 12 new cottages and an additional 150 rooms.
As part of that expansion, a new chef, Nathan Beriau, is now at the helm of the Inn at Palmetto Bluff. In conjunction with beverage manager David Mason, the team will roll out a new culinary program and work on additional restaurants and eateries once the property has expanded.
Chef Beriau hails from the Ritz-Carlton, San Francisco, where he advanced from cook tournant first to executive sous chef and then to executive chef after more than a decade at the hotel. He began his career by earning a degree in culinary arts from Southern Maine Community College in South Portland.
Beriau and Mason sat down with The Daily Meal to discuss their vision for the next phases at the Inn at Palmetto Bluff and their goal of expanding the property’s Food of Place events.
“The property here is amazing, with over 22,000 acres of space for us to host all different kinds of culinary and private events,” Beriau explained. “The F&B programming is approached with an entrepreneurial spirit. It’s owned and defined by its chefs, staff, and other influencers at the hotel. Our main focus is to make sure nothing ever feels cookie-cutter.”
To that end, in the first days of arriving at the Inn at Palmetto Bluff, chef Beriau and Mason put together their inaugural Food of Place dinner: Salt, Smoke and Cure, which took place this May.
The hotel co-hosted the event alongside Joe Davis, winemaker and owner of Arcadian Winery in Santa Barbara, California. The trio was extremely meticulous about crafting a menu that not only went along with their theme of smoked food but also complemented Arcadian’s best wines.
“I have a very prescriptive style of food,” began Beriau. “There were subtle nuances throughout the menu, but I also came at it from a global perspective. For example, one of the appetizers I created for this dinner was crispy steamed buns with mustard that very much resemble a banh mi.”
The menu consisted of a variety of air-dried and cured meats, including air-dry ducks for the program’s Peking duck with rhubarb, alliums, spring peas, and sweet and sour sauce. It was paired with the 2001 Garys’ Syrah.This was exhibited in dishes like first of the season South Carolina peaches with La Quercia guanciale, spicy basil, burrata, and Georgia wildflower honey.

In conjunction with the hotel’s larger events, the F&B program also offers first Friday dinners at the hotel’s most beloved casual dining restaurant, Buffalo’s. Additionally, there are artisan cooking classes for home cooks and novices alike. One upcoming class in July will teach students how to charcoal grill with the very best of them.
There is arguably no better place to create such culinary events, says the duo. They have an extensive number of venues to choose from, such as Buffalo’s, the Inn’s wine cellar, or the event space right in the middle of property next to the town’s wedding chapel. They also cater a number of private events and can create tailored menus for weddings or even gatherings for homeowners on the property.
Mason, who began his career at the Inn at Palmetto Bluff before making his way up to the position of beverage manager, has been on a mission to solidify strong relationships with small boutique wineries throughout the country, enhancing the beverage programming on the property. The hope is that these wineries will team up with the hotel to work on special culinary dinners and wine programming.
Both Beriau and Mason are behind the special programming that can be seen throughout the year, no matter the season. The process is quite collaborative, they believe, and they work with many of the seasoned staff members to create memorable dining experiences for their guests and the property’s homeowners.
Next up for the Food of Place events is the Pig & Swig Beer Dinner on September 6, which will feature the River Dog, Allagash, Stone, Anderson Valley, and Victory breweries. For more information on the upcoming culinary programming, click here.

This Park Hyatt feels like two hotels in one. The original 23-room mansion, built in 1934 by French architect Leon Dourge, defines Belle Époque elegance with elaborate ironwork, glass chandeliers, and Persian rugs. Next door is the 142-room Posadas building, a sleek and minimalist tower that opened in 2006. What links the two spaces—in addition to rotating contemporary art exhibits—is impeccable service that elicits kudos from even the most discerning globetrotters. And while the rooms’ appearances vary according to their era (hardwood floors and silk curtains in the Palacio, a natural palate and contemporary furniture in Posadas), all have the highest-end technology, soaking tubs, and bathrooms bedecked in Travertino marble. At La Vinoteca lounge, a sommelier and maitre fromager pair wines from among 3,500 bottles of Argentine vintages with regional cheeses.
The Goring
This 69-room family-run hotel deftly balances glitz and English charm. Minutes walk from Buckingham Palace, the century-old pile has long been royally favored: it&aposs where King George VI (and a teen Elizabeth II) came for breakfast to celebrate the end of WWII. Guest rooms layer thoughtful touches with the best of British design. Russell Sage recently revamped four suites using historic silk, some originally commissioned for state carriages of the Royal Mews. In the David Linley-designed Dining Room, guests can feast on British traditional dishes (steak and kidney pie, Lincolnshire rabbit stew) under scintillating Swarovski chandeliers.

“Perfect,” “heaven,” and “the best vacation of my life” are just a few ways guests describe this understatedly gorgeous, isolated resort where most of the 243 rooms, in low-rise bungalows, have ocean views. It’s popular with Hollywood celebrities for good reason: the five-star service is impeccable the grounds border the dramatic volcanic rock coast with seawater and freshwater swimming pools an open-air spa teems with tropical vegetation and yoga, personal training, and a full menu of fitness classes are offered daily. The private, oceanfront Jack Nicklaus signature golf course is carved right into the underlying black lava, which serves as occasional bunkers.

With Spanish moss dripping from low-lying oak branches and egrets soaring overhead, life at this plantation-style luxury resort seems to move at the pace of a deep-southern drawl. But the many diversions𠅊 Jack Nicklaus Signature golf course, fly-fishing, spa treatments, naturalist-led alligator “hunts”—sequestered on 20,000 acres of South Carolina coastal marshland leave little time for ennui. Fifty cottages house enormous rooms and suites (1,150- and 1,350- square feet, respectively), with pine floors, gas fireplaces, and private screened porches.

Meet Chef George
Growing up only minutes outside of New York City and having access to some of the richest east coast fisheries, George Mandakas has had a life-long relationship with local, sustainable seafood thanks to his love of the ocean and his Greek-American heritage. Following a transition from his previous career as a Corporate Research Scientist investigating the genetic and molecular effects of toxicants and contaminants upon various biological systems, including early research in aquatic toxicology on local fish species around the Hudson River Basin, George’s culinary talents blossomed under the mentorship of James Beard Award winning Chef Kirk Avondoglio, Executive Chef/Owner of Perona Farms, who is known throughout the international restaurant scene for his world famous smoked salmon.
With his passion for fresh, healthy Mediterranean cuisine, George leveraged his unique combination of award-winning culinary talents and scientific experience to bring new dimensions to each of the food concepts in which he became involved, being featured in many print and web media outlets including Travel and Leisure, The New York Times, AM New York, NJ Monthly, HGTV, Greatist.com, Yahoo.com and Jersey Bites, as well as his appearance on ABC-TVs The Chew for his “World’s Best Sandwich”. As a Chef, George has been recognized not only for his balanced and responsible use of modernist techniques with respect to traditional cuisine but also for his passionate support of the development of responsible and renewable food systems, both in sustainable agriculture and fisheries. Championing the use and integration of by-catch, trash and under utilized aquatic species into mainstream restaurant menus, George has spent the bulk of his culinary career demonstrating, educating and preparing innovative seafood dishes for both his welcomed guests as well as his Chef colleagues. Besides his efforts related to the promotion of seafood-based product streams, George is driven by philanthropy and is heavily involved in many community-based partnerships for culinary relief, food rescue and distribution and meal production. These organizations include City Harvest NYC, NJ Foodshed Alliance, Dock to Dish, Manna House, Project Self Sufficiency, Loaves and Fishes Soup Kitchen and the Borden Avenue Homeless Veterans Shelter.
Professionally, George has shared his culinary vision and culture in some of the NY/NJ area’s best kitchens including his tenure as Chef de Cuisine at Escape, Montclair, NJ the Executive Chef/Manager of The Blue Olive Market (Kellari Hospitality Group), the first of its kind Greek and Mediterranean inspired gourmet marketplace/cafe/wine bar in Manhattan specializing in fresh, locally-sourced seafood and produce where he developed innovative team and customer-based educational programs designed to showcase the health benefits and history of Greek and Mediterranean cuisine The Executive Chef of the Boro Hotel and Beebe’s Restaurant in Long Island City and most recently, Executive Chef, Fordham University (Aramark Corp) where he has instituted newly created Chef-driven healthy menus, Vegan-based food programs, Healthy Cooking Demonstration events, The Kitchen Garden Project and a Chef moderated Dine and Learn Educational Series on the Cognitive benefits of the Mediterranean Diet.
Second only to his dedication to culinary relief and education, is his quest to help develop and promote healthy, responsible and sustainable food systems. ASHLEY SMIT APPOINTED FRONT OFFICE MANAGER AT HILTON DURBAN
Hilton Durban has announced the appointment of Ashley Smit as Front Office Manager.
Markus Fritz, general manager, Hilton Durban, said, “We are very pleased to announce Ashley’s appointment as the new Front Office Manager for Hilton Durban and I look forward to the contributions he will undoubtedly make at Hilton Durban.”
Smit brings 10 years of experience to his new role at Hilton Durban. In his former role as the Assistant Front Office Manager at The Michelangelo Hotel in Sandton, he was responsible for overseeing the front office operations such as the service, quality and overall experience of guests.
“I’ve always had a big heart for hospitality. The rewarding part for me is finding opportunities to connect with our guests. I hope to add value so we can create many more memorable experiences every day,” said Smit.
Prior to Michelangelo Hotel, Smit had a year as front office supervisor at the Hyatt Regency New Orleans in U.S., giving him great international experience. Prior to his year in the U.S., he was with Champagne Sports Resort and the Makaranga Garden Lodge in KwaZulu Natal.
New Meetings in Surf City
Pasea Hotel & Spa, Huntington Beach, California
Huntington Beach in Southern California has long been known for its world-class surfing, earning it the moniker Surf City. It’s also emerging as more of a meetings destination, and took a big step forward last month with the opening of Pasea Hotel & Spa, a Meritage Collection property.
“With the opening of Pasea Hotel & Spa, we can offer planners an exciting complement to our existing collection of laid-back luxury resorts,” says Elsie Jean Rodriguez, director of national sales for Visit Huntington Beach. “The space is very contemporary and light-filled. It will particularly appeal to NextGen planners and meeting attendees.”
Pasea, located just steps from Huntington Beach Pier, held its grand opening June 10. The property features 250 guest rooms and suites, almost all with ocean views, as well as Aarna, a Balinese-inspired spa that includes indoor and outdoor treatment areas.
Tanner’s restaurant features fresh California cuisine, and guests are able to watch the culinary team in action at its wood-fired inferno grill in an exhibition kitchen encased in glass. Groups can also head upstairs to the restaurant’s Treehouse Lounge, where specialty cocktails—handcrafted by an award-winning mixologist—are offered on a rooftop patio.
The property offers 34,600 sq. ft. of meeting space, including a 14,600-square-foot ocean lawn and terrace and 8,400-square-foot Sapphire Ballroom. The meeting facilities boast advanced audiovisual offerings, music and technology that can be customized for events.
Pasea is adjacent to another major property, the 290-room Waterfront Beach Resort, a Hilton Hotel—a AAA Four Diamond recipient that overlooks the Pacific Ocean. The Waterfront, which features a dramatic indoor waterfall, offers 21,500 sq. ft. of meeting space, including a 5,850-square-foot grand ballroom. The resort is in the process of building a new nine-story, 152-room tower and meeting facility that will open in late spring 2017.

Walrus and Carpenter Oysters Announces Fourth Annual Farm Dinner Series with Eight Renowned Chefs
This summer, Walrus and Carpenter Oysters is proud to present their 4th Annual Oyster Farm Dinner Series with Al Forno, Avenue N, birch, Blue Hill NY, Gracie’s, north, Persimmon and Tallulah on Thames. Each dinner features a tour of the farm, an in-the-water raw-bar, a multi-course dinner prepared by a chef committed to sourcing local seafood, and wine selections by the experts at Bottles Fine Wine. Each of the eight dinner experiences begin at 3 p.m. with a boat ride and tour of the 6-acre offshore oyster farm, with discussion and time for questions about the local ecosystem and environmental benefits of oyster farming. Following the tour, guests will enjoy an in-the-water raw bar featuring freshly harvested Walrus and Carpenter Oysters. Monday, July 18th | Chef Matthew Varga of Gracie’s
Varga is a graduate of Johnson & Wales University, and began working at Gracie’s in 2007. He was promoted to Executive Chef in 2010. Since then, Gracie’s has won the AAA four-diamond award five years in a row for their seasonally-inspired cuisine and impeccable service. Varga has been featured in Art Culinaire and as a guest chef for the Democratic Governors Association Taste of America gala.
Tuesday, July 19th | Chef Jake Rojas of Tallulah on Thames & Tallulah’s Taqueria
Rojas originates from El Paso, Texas and is a graduate of the Culinary Art Institute of Dallas. In 2014, he received a StarChefs.com Rising Star Chef Award. Some of his earlier career tours include Sous Chef at Joel Robuchon at the Mansion & Chef de Partie at Alain Ducasse’s Mix. Jake’s restaurants embody the flavors from his childhood, with technique from his experiences working with the best culinary leaders in the country.
Wednesday, July 20th | Chef Meytal Kotik of Blue Hill NY
Meytal is the chef de cuisine of Blue Hill in New York City. Transforming daily, the menu focuses on local food sourced from producers who respect artisanal techniques. Ingredients come from nearby farms, including Blue Hill Farm in Great Barrington, Massachusetts, and Stone Barns Center for Food and Agriculture in Pocantico Hills, New York. Following culinary school, Meytal worked for Danny Meyer’s Union Square Hospitality Group before joining the Blue Hill team.
Thursday, July 21st | Chef Nick Rabar of Avenue N
Nick has been cooking in Rhode Island ever since relocating from Upstate New York in 2001. He spent his first 10 years in Providence before opening Avenue N American Kitchen in the historic Rumford Center in Rumford, RI. He describes his food as approachable, progressive American fare that is guided by the seasons. He is the Emmy Nominated host of Nick Rabar: Chef 2 Go, 2-time Chef of the Year for the state of Rhode Island, has been named one of the Best and Brightest Young American Chefs. Chef Rabar sits on the board of directors at Hope & Main and has made numerous appearances on the Food Network.
Monday, August 15th | Chef David Reynoso of Al Forno
Reynoso is the executive chef at the internationally renowned Al Forno restaurant, where local ingredients shine in dishes cooked in wood-burning ovens and on grills over hardwood charcoal fires. He is the recipient of many accolades, including StarChefs.com Rising Star Chef Award. For this dinner, David will be tapping into his roots with a meal inspired by his birthplace, Mexico. Chef Reynoso’s menus feature seasonal New England ingredients, as well as a variety of cultural and culinary influences.
Tuesday, August 16th | Chef Benjamin Sukle of birch & Oberlin
Sukle takes a “from the roots up” approach to all aspects of the dining experience, expressing the best of New England through a creative, modern and environmentally engaging menu. Ben received a 2014 StarChefs.com Rising Star Chef Award, and has been twice nominated for Food & Wine’s People’s Best New Chef. He has been nominated for the James Beard Foundation’s Rising Star Chef and Best Chef New England.
Wednesday, August 17th | Chef Champe Speidel of Persimmon & Persimmon Provisions
Speidel is the chef and owner of Persimmon Restaurant, newly transplanted from Bristol to Providence’s East Side at 99 Hope Street in the former Rue de L’Espoir space. He has been serving contemporary American cuisine in harmony with the seasons since 2005. In 2010 he opened Persimmon Provisions in Barrington, a whole-animal butchery with well-curated cheeses, charcuterie and pantry items. Speidel is a six-time nominee for Best Chef: Northeast by the James Beard Foundation and recently was honored by his Alma Mater Johnson & Wales University as their 2016 Honorary Doctoral Candidate.
