  1. In a small bowl, mix cream cheese and Italian-style dressing mix. Spread equal portions of the mixture on bread slices. Top each with a slice of cucumber.

Very easy and they are a big party hit! To make them extra fancy, I add a small piece of pimento on top of the cucumber and sprinkle with dill weed. The red (pimento) and green (cuke) are a great combination for your holiday table.-08 Oct 2002

i served these at a party and they were a big hit, however-when i tested the recipe prior to the party i discovered that the amount of the italian seasoning dressing that was called for was way too much-so i scaled it back a bit. otherwise they were great.-24 Sep 2003

Cucumber Canapes

These canapes are easy to make and easy to eat! Bring these open-face sandwich bites to parties for a tasty appetizer that will make you the hit of the party. Using only 5 ingredients you will have a fancy appetizer with very little prep needed. Try different vegetables in place of the cucumber, like thinly sliced zucchini or red bell peppers.


Cucumber Canapes

Cucumber slices hollowed out and filled with cream cheese, shrimp and dill!

Ingredients

8 ounces Hahn’s Cream Cheese
3 Tbs fresh dill, minced
1 Tbs milk
1/2 tsp onion powder
1 cucumber
12 shrimp, cooked
1/4 red or orange bell pepper

Instructions

  1. Mix together cream cheese, dill, milk and onion powder in a bowl until fully incorporated.
  2. Put the cream cheese mixture into a piping bag and put to the side.
  3. Slice a cucumber into 1 inch pieces, then using a spoon, hollow out a well in each slice.
  4. Pipe cream cheese into all of the cucumber cups evenly, creating an anchor for your other toppings.
  5. Place a shrimp on top of the cream cheese and garnish with more dill.
  6. Serve cold.

Kentucky Benedictine Dip (or Spread)

This Benedictine spread with cucumber can be used as a dip or a sandwich and canape topping. It was created by Jennie Carter Benedict, a cookbook author, caterer, and restaurateur. She operated a Louisville restaurant and tea room, Benedict's, in the early 20th century. In addition, Miss Benedict was the editor of the Louisville Courier-Journal's household section for a time.

It's a simple combination of cucumber, onion, cream cheese, and simple seasonings, and it is an excellent appetizer to serve a Kentucky Derby gathering. Serve it along with crackers or vegetables as a dip, or use it as a spread for tea sandwiches. If too thick, add a small amount of cream or sour cream, or add some extra grated cucumber.

For the green color, some versions include spinach or parsley, while others use green food coloring. The original recipe uses 3 tablespoons of cucumber juice and 1 tablespoon of onion juice instead of grated cucumber and onion, and it includes a pinch of cayenne pepper.

It is finally starting to feel like spring around here. Days are getting longer, birds are chirping, sun is shining. and to top it off, I am finally back home for good after completing a 6-month work contract in a town 2 hours away. Meaning, I can see my hubby all week long (not just on weekends) and I can start hosting some get-togethers at our place. And what takes the stress out of planning and hosting the perfect party? Four quick and easy RITZ Crackers recipes.

That is right, I am sharing four recipes today. I told you I was in a good mood! So, there is a recipe in there for everyone. I got a couple of savory recipes and a couple of sweet ones, whatever suits your palate.

My classic, go-to snack has always been RITZ Crackers paired with cream cheese. I pretty much lived on this stuff as a bedtime snack when I was a child. But now, you can say that a remixed version of this snack exists in my life. By remix, I mean the addition of extra ingredients to bring a bit more life into this snack. I'm talking ingredients such as cheddar cheese, jalapeño peppers, smoked salmon, arugula, nutella, and strawberries.

I know, I know, the curiosity and anticipation is too much. Wait no longer, here are my top four sweet and savory RITZ Cracker recipes.

The Crackers:

  1. Smoked Salmon, Cucumber and Cream Cheese Bites

  3. Nutella and Peanut Butter Explosion
  4. RITZ Strawberry Cheesecake Bites

The best part of all? Each of these bites takes about 5 minutes to put together (with the exception of the nutella and peanut butter explosion recipe which may take a few extra minutes to pipe out the peanut butter). Basically, with 20 minutes, a few boxes of RITZ Crackers, cream cheese and a few extra ingredients (all of which you can pick up at your local Safeway), you are ready to host all the parties that your heart desires!

Finely chop the herbs and cut the cucumber into slices that are about 1/4 inch thick, then cut each slice into quarters.

Create!

Mix the herbs into the softened cream cheese until well-combined.

Spread the cream cheese onto the crackers and top with a piece of cucumber.

Present!

Place the Herbed Cream Cheese and Cucumber Crackers onto a serving tray.

Alternatively, you can set out a bowl of the Herbed Cream Cheese, crackers, cucumber pieces, and cheese spreaders for guests to assemble their own crackers.

Quick And Easy Smoked Oysters Party Appetizer

This recipe is inspired by my favorite snack and the need for quick and easy appetizers during the holidays. It’s one of the first recipes on this blog that will use fermented foods as an ingredient instead of being a fermented food recipe. I battle with the idea that sauerkraut is only to be served with bratwurst and I am on a mission to change that perception. I add sauerkraut and other pickled vegetables to my meals and they add a depth of flavor and zing to recipes that doesn’t compare to anything else.

These scrumptious, healthy appetizers are one of my favorite quick snacks when I am whipping up meals in the kitchen or when I need a quick appetizer when I have friends over. I made them fancier and tastier by dressing them up with my raw pickled ginger carrots. These are very easy to assemble and will only take 5-10 minutes. No cooking or excessive prepping needed.

My plan is to show you how to use fermented foods to add more flavor and zing to your recipes. Since it’s the season for holiday gatherings, I thought my Quick and Easy Smoked Oysters Party Appetizer would be the perfect recipe to start. I am hoping the fermented food love will be shared and just maybe others will want to add fermented foods to their diet too.

This recipe is fun, easy and the presentation is perfect for a dinner party. You can make this ahead since the cucumber will not get soggy like crackers do. How to make veg. canapes recipe?

1. The ingredients quantity can be set as per your serving requirement under Change Serving. We recommend you set it prior to the start.

2. Cut bread and toast in oven for 2-3 minutes

3. Slice and mix the bell peppers, baby corn and asparagus

4. Add salt, pepper, mixed herb and olive oil

5. Place the vegetables on a baking tray. Bake for 2-3 minutes.

6. Spread butter or cream cheese onto the bread or biscuit.

7. Place the cooked vegetables on top.
